Recipe: Guilt-Free Chocolate Truffle Brownie Bites


How is that "new year, new you" diet plan treating you? If you find yourself craving decadent, chocolaty treats, this is the guilt-free recipe for you.

When you're cutting the carbs, those cravings are no joke. And the scary thing is, no matter how determined you are to stick to your nutritional plan, those crafty cravings can cause you to cave - throw in the towel, eat whatever you want. But let me tell you a secret - you can trick those cravings and let them work for you! How?

When I'm going sugar free, I always keep a container of brownie bites close at hand. These rich, chocolate truffles have absolutely nothing in them to induce dieter's remorse. No sugar, and yet they taste great - like brownies or dark chocolate truffles.

Here's an added bonus: this recipe is also gluten free, dairy free, sugar free, vegan, and MSG free.

Brownie Bites

Ingredients

10 pitted dates

2 tbsp water

1 cup walnuts or pecans, chopped

1 cup unsweetened cocoa powder

1/4 cup dried shredded coconut

1 tsp stevia

5 tbsp coconut oil, melted

1 tbsp olive oil

Preparation:

1. Place dates and water in a food processor or blender. Blend until a paste is formed.

2. Melt coconut oil over low heat.

3. In a medium bowl, combine date paste, nuts, cocoa powder, shredded coconut, stevia, coconut oil, and olive oil. Mix with a spoon until combined.

4. Your mixture should be the consistency of a thick, soft dough. Roll the brownie bites by hand, using about 1 tbsp for each.

5. Place brownie bites on a plate or pan and refrigerate until hardened.

6. Store in the refrigerator until ready to serve. Enjoy!

Makes approximately 2 dozen brownie bites.
