Recipe: Fresh Cucumber Mango Salad

I don't normally think of putting fruits and vegetables together in the same dish.

I also don't normally think of Walmart stores as a destination for healthy eating.

Yesterday, I walked into my local Walmart and stopped by a food sample/demonstration booth. What

awaited me in the tiny disposable ramekin looked appealing - cucumbers and other colorful produce glimmering with oil and spices. But what I learned next surprised me.

Accompanying the cucumber were tomatoes and mangoes - yes, mangoes. The glaze consisted of olive oil and honey. And the spice - it wasn't savory. It was dried mint.

I was intrigued - even more so after I put the salad into my mouth. These simple ingredients exploded with fresh, crisp, and refreshing summertime flavors.

But don't take my word for it.

Prep Time: 20 minutes

Yield: 2 to 4 servings

Ingredients:

1 cup cherry tomatoes, quartered

1 cucumber, diced

1 mango, diced

1/8 cup olive oil

2 tbsp honey

1 tbsp dried mint

Preparation

1. Wash fruits and vegetables. Peel cucumber and mango. Slice.

2. In a large bowl, combine tomatoes, cucumber, mango, olive oil, and honey. Gently stir to coat the fruits and vegetables.

3. Sprinkle with dried mint. Garnish individual servings with additional mint.

4. Enjoy!
