Recipe: Sous Vide Egg Bites

They're high-protein, low-carb, gluten free, and dairy free. You may have been enjoying sous vide egg bites at your favorite coffee shop, but now you can make them in the comfort of your own kitchen.

Sous vide (pronounced "sue veed") is a French cooking method that uses water to evenly cook food, heating it to the perfect temperature and no higher.

The result is a light and creamy egg bite that makes a great meal on the go.

The best part is, you don't need any special equipment to perfect this sous vide recipe - you likely already have everything you need in your kitchen.

Prep time: 10 minutes

Cook time: 35 minutes

Ingredients:

9 eggs

3 strips bacon

1/4 cup vegan cheese

1/4 bell pepper, chopped

1 tsp garlic powder

1 tsp onion powder

1 tbsp dried parsley

1 tbsp olive oil

Pinch of crushed red pepper

Salt and pepper to taste

Preparation

1. Heat oven to 350 degrees Fahrenheit.

2. Place 12 silicone cupcake cups (or one silicone muffin tin) in a glass baking dish. Grease cups or muffin tins with olive oil.

3. Fry bacon to desired crispness. Then, lightly saute the bell pepper in the bacon grease. Crumble bacon and set aside.

4. In a medium mixing bowl, combine all ingredients. Mix well.

5. Ladle about 1/4 cup of egg mixture into each muffin or cupcake cup.

6. Pour water into the baking dish, taking care not to spill any into the egg mixture. When the water nearly reaches the tops of the cups (or when they begin to float), the level is sufficient.

7. Bake for 35 minutes.

8. Enjoy!

Tip: Egg bits will keep in the refrigerator for several days. You can also freeze them for longer storage. Reheat refrigerated egg bites in the microwave on high for 30 seconds; heat frozen egg bites for one minute.
