Recipe: Healthy Pork Chop Fajita Salad
When you decide to leave off sugar and grains for a while, you inevitably get very creative with what
you eat - and often, you find that the meals you prepare are richer and tastier than ever before.
This was the case with this porkchop fajita salad, an original recipe by Cara Siera.
Prep Time: 10 to 15 minutes
Servings: 2
Ingredients:
2 tbsp olive oil
2 porkchops
2 green onions, sliced
1/2 bell pepper, sliced
1/2 tomato, cubed
2 small portabella mushrooms, sliced
1 tsp garlic powder
Ground cayenne to taste
Salt and pepper to taste
2 cups lettuce
1/4 cup cooked black beans
4 tbsp plain Greek yogurt
4 tbsp shredded cheese
2 tbsp onion crisps
Salsa to taste
Preparation:
1. Heat olive oil in a mediu
Tip: Iron skillets will brown the meat and vegetables, offering an authentic, restaurant-style flavor.
2. Slice porkchops into strips. Season with garlic powder, cayenne, salt and pepper.
3. Saute meat and vegetables together until the vegetables begin to caramelize and pork is thoroughly cooked.
4. Divide lettuce between two serving bowls. Layer with black beans, meat and vegetables, cheese, onion crisps, Greek yogurt and salsa.
